It is just because of the fact that different seasons, ages and cultures also consist of doshas. Lonsdorf says that cool vata corresponds to winter where as hot pitta symbolizes summer. If talking about an increase in age, one need to know that with age people becomes more vata.

There is no need to say that diet plays a vital role in all such circumstances and should be strictly emphasized on before, during and after panchakarma.
